三杯雞 Sam Bui Chicken
材料
鮮雞 半隻(450克)
油 3湯匙
薑片 大大舊
蒜頭. 5粒
麻油 2湯匙
米酒 1/2杯
豉油 4湯匙
九層塔(切碎) 1條
糖/冰糖(整碎)1湯匙
辣椒 1隻(不吃辣的可省)
製作
1.
將雞剁成兩吋長方塊,薑片、蒜頭大蒜輕拍備用。
2. 將油燒熱用薑與蒜頭爆香後加入雞肉拌炒,炒至雞肉反白,加入麻油、豉油用中小火至燒乾,最後加糖,再攢米酒至燒乾。
3. 最後加入九層塔及辣椒(如用的話),即可上碟。
